Arugula instead of dandelion greens?

I tried dandelion greens in the past and the taste is a little - well - too bitter :) Any way I could replace dandelions with arugula and get the same benefits on the digestive juice part?

Arugula not bitter enough

Hi Joy,

Well, sorry to disappoint, but arugula does not really cut it as a bitter. Bitters act in a very specific way. The bitter receptors in our mouth need to be stimulated in order for the digestive cascade to start. So the bitter taste really need to be felt in the mouth. The quantity does not matter much, it is more the bitter *quality* that matters.

So here is what I suggest. If you suffer from chronic constipation, integrate a bit of dandelion greens as often as possible to start the meal. The quantity won't matter, it could just be a mouthful (in which case you don't need to bother with a fancy vinaigrette obviously).
